Bundle of Joy



This week, Richard and I had a couple of days off from work, so we made a trip up to Gallant to see Kimberly and Cooper while Clay was at work. He is such a cutie and a bundle of joy! Even though our trip was relatively short, we enjoyed our time with them. He is growing so fast and has already changed since we saw him at Christmas. I had to post a picture! Can't wait to see them again!

Chicken Dijon

Here is a new recipe from Southern Living Quick and Easy Weeknight Meals. It was really easy and turned out great. Richard said that it is one of his new favorites!

Chicken Dijon
Ingredients:
  • 6 skinned and boned chicken breasts (we used chicken tenderloins)
  • 1 tsp. salt
  • 1/2 tsp. pepper
  • 3 Tbsp butter (we didn't use quite that much)
  • 1 (14 1/2 oz) can chicken broth
  • 1 medium-size sweet onion, diced (we only used half the onion)
  • 2 Tbsp all-purpose flour
  • 3 Tbsp Dijon mustard
Directions:
  • Sprinkle chicken evenly with salt and pepper.
  • Melt butter in large skillet. Add chicken and cook 2 minutes on each side or until golden brown.
  • Whisk together chicken broth, onion, flour and mustard; pour over chicken. Cover, reduce heat to low and simmer for 20 minutes.

We had this chicken dijon with ranch potatoes and french style green beans! Delicious meal!!
